Anyone can give a little insight what is it like to work on ctv as a deckhand? General duties and so on?

Food depends solely on your cooking skills and subsistence allowance. Working in summer season is tense, winter can be easier due to weather restrictions and stay in port. Comfort depends on the vessel design, can be personal cabin for each crew member or shared one in worst case. Also, if there is a large deck area, cargo handling/slinging will take place.

also depends on region. in persian gulf - all mentioned above by me. in uk, north sea is better. sometimes crew accommodation is in a hotel.
i'm long time working as a seaman, but only on a crewboat I'm getting seasick, also note that.
